Elizabeth Louise "Betty" Schrimpf

August 7, 1940 ~ November 22, 2020
She was born August 7. 1940, in Osage County, the daughter of the late Henry Louis and Angeline Louise (Schenewerk) Veltrop.
Her high school and college educations were attained at School Sisters of Notre Dame Convent in St. Louis.
She was married on December 28, 1959 in Jefferson City to Robert Lewis Schrimpf, who preceded her in death on August 9, 1995.
Betty retired from Employment Security Credit Union after 25 years as outgoing President.
She was an active member of St. Peter Catholic Church, St. Anne Quilters Group, Perpetual Adoration, and Capital Region Auxiliary. Betty was a 2012 Zonta Women of Achievement nominee.
She was a volunteer coordinator for St. Vincent De Paul Society at St. Peter Catholic Church since 2009; served on the Parish Council; substituted as a teacher for PSR religion classes; served as a Eucharistic Minister, Mass Coordinator and Lector for weekly Mass; served on the Board of Directors for Liberty Senior Citizen Homes for the elderly in Taos. In earlier years, Betty was a girl scout leader and den mother, room mother, and served on the PTA, when her children were in school.
Betty enjoyed playing cards, traveling, casinos, reading, quilting, bingo, bunco, viewing lakefronts, board games, and family gatherings. Betty mostly cherished her time spent with her children, grandchildren, and all family members.
Survivors include a four children, Anne Marie Schrimpf; Brenda (Mike) Engelbrecht; Cheryl Kay (John) Sanning; and Carl (Candace) Schrimpf, all of Jefferson City; a daughter-in-law, Madonna Schrimpf, Memphis, Tennessee; thirteen grandchildren; sixteen great-grandchildren; one great-great-grandchild; and six siblings, Henry (Margaret) Veltrop, Jefferson City; Margie Luebbert, Jefferson City; Jim (Joyce) Veltrop, Romance, Arkansas; Tom (Helen) Veltrop, Jefferson City; Gary (Charlene) Veltrop, Jefferson City; and Cathy (Gary) Scribner, Russellville.
She was preceded in death by her parents; her husband, Robert Schrimpf, one son, Derek Schrimpf; and a brother-in-law, Levoy Luebbert.
Visitation will be 9-10:00 a.m. Friday, November 27, 2020, at St. Peter Catholic Church.
Mass of Christian Burial will be 10:30 a.m. Friday, at St. Peter Catholic Church with the Rev. Jeremy Secrist officiating.
Live streaming of the mass will be available on Facebook for anyone wishing to follow the service from home. The stream will be available under the account of Brenda Lynn Engelbrecht.
The general public is welcome to attend the services while following social distancing guidelines. Facial coverings are encouraged while in attendance.
Burial will be in Resurrection Cemetery.
In lieu of flowers, memorials are suggested to St. Vincent De Paul Society.

Betty, I so wish we were on one of the many trips we took together. I was able to go to places I never dreamed of going like Dominica Republic, places I would never haven seen like Washington D.C., taking car rides,boat rides, plane rides, and train rides. Two things remind me of those trips: 1. You taught me well to gamble and 2. I was always taking pictures. I hope this video comes thru because I am sure laughing at your comments along with Tom and Helens. I think out of all the train trip was the best.

She always helped me help others. She also ,with her church group fixed one of my Nana’s quilts. Such a kind, wise and caring person…. With a great sense of humor.
Betty always started her day with a positive attitude and a grateful heart. At least that was my experience in the time that I was fortunate enough to work with her when we served together on the Sr. Citizens Board of Directors in Taos. She cared so much for our residents there. My, what a loss for us all. When I first heard of Betty’s passing I began to reflect on what a caring person she was, and put my thoughts down in the form of a poem that had a deep, personal meaning for me, and probably for many of those whose lives were touched by her kindness: Her journey is finished or so it seems We now must think what it really means For us to lose a remarkable friend Who was kind and caring right up to the end She touched our lives from the very start And made her world a better place with her kind and loving heart The legacy she leaves of service and love Will be noted by Him above And now that she has crossed to the other side We’ll recall her memory with love and pride
I have known Betty and Cheri since Cheri was in my third grade class at St. Peters. The family lived down the street from us. I would come home from teaching and she would be there coming over to see us. Betty was a very kind, loving mother. My husband and I knew her all these years and cherished our time with her. I will not be able to attend her services but Cheri I am praying for you and your family.

We’ve known Betty since 1973. She was a strong woman who made life fun and exciting for her kids and extended family. We adopted 3 of her kids as our own. We will miss you but will still be taking care of some of your kids

Condolences to Betty’s Family upon her death. Betty and I were classmates from first grade through eighth. There were only three girls in the class and we were very close friends. Betty was always “tiny” but she had a lot of giggles and fun in her. May her soul rest in peace.

Betty was such a valued volunteer in many roles at St. Peter’s. I haven’t lived in Jefferson City for over four years, but happened to be viewing a livestream Mass on the Sunday after Thanksgiving and heard of her passing. RIP, Betty, and my sincere sympathy to her loved ones. Donna Prenger
